Apetit’s new Vegan Burger Patty combines texture, taste and nutrition

The new plant-based Vegan Burger Patty is one of Apetit’s new products for professional kitchens this autumn. The patty contains Apetit’s own innovative ingredient, BlackGrain from Yellow Fields® textured vegetable protein (TVP).

The Vegan Burger Patty is a tasty and juicy 100 g patty with a pea protein base that is especially well-suited for burgers. It stands out among other plant-based burger patties thanks to its great structure.

“The mouthfeel and bite of the patty resemble a traditional minced meat burger patty, which sets it apart from many other pea protein patties on the market,” says Apetit’s Product Developer Kati Mäkelä.

The patty’s mild flavour allows it to be used in a wide variety of flavour profiles and applications. This high-protein novelty patty is suitable for both vegan and gluten-free diets.

Apetit’s new burger patty contains BlackGrain from Yellow Fields® textured vegetable protein (TVP), an excellent source of protein, fibre, and beneficial fats. The Vegan Burger Patty meets the criteria for the label “high in protein,” meaning that at least 20 % of its energy content is protein.

BlackGrain TVP is a high-performing textured vegetable protein that provides great structure, chewiness, umami flavour, and a natural dark colour in meat analogues. It consists of 20% BlackGrain rapeseed powder and 80% pea protein isolate.

“BlackGrain TVP improves both the structure and nutritional profile of our new plant-based patty. The patty’s texture is a real success story from the product development process,” says Juha-Pekka Järvinen, Research and Product Development Manager at Apetit.

BlackGrain TVP and BlackGrain rapeseed powder are innovative Nordic rapeseed ingredients developed by Apetit. They preserve the excellent nutritional qualities of rapeseed and are rich in fibre, protein, and healthy oils. BlackGrain from Yellow Fields® rapeseed powder was granted novel food approval in 2021.

The new Vegan Burger Patty carries the Finnish Heart Symbol

As recognition of its beneficial fats, Apetit's Vegan Burger Patty has been granted the Finnish Heart Symbol. This nutrition label is given to products that qualify as a healthier choice within their category. Plant-based protein foods can earn the Finnish Heart Symbol if they contain high-quality unsaturated fats and only a moderate amount of salt.

“Many plant-based protein products unfortunately contain a lot of salt and saturated fat. In this patty, however, flavour, texture, and nutrients meet in a healthier way. The new Vegan Burger Patty is juicy with only a modest amount of hard fats,” Mäkelä concludes.

Apetit announced in stock exchange release on 9 October 2025 that it has signed a contract according to which Apetit acquires 100 percent of the shares of Foodhills AB, a Swedish producer of frozen peas.
